Whole Wheat Bread - No. 1

  • 3 cups whole wheat flour
  • 2 cups white flour
  • 1 tablespoon shortening
  • 1 cake compressed yeast
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 1 cup warm milk
  • 2 cups warm water
Sift dry ingredients, and rub shortening in with fingers. Soak yeast in 1/2 cup of the lukewarm water until dissolved. Stir dry ingredients and liquid well together with a large spoon, until free from lumps. Then work enough whole wheat flour in with the hands to form a soft dough. Rub a little melted butter lightly over the surface. Let the mass rise until it doubles its bulk. This amount should make 3 small loaves or 2 large ones. After it is molded into pans, the surface is again brushed with melted butter, and the loaves are allowed to rise up until light. Oven should be quicker than for white bread, as it should be briskly. After loaves are baked and cooled a little, brush again with melted butter and let cool completely before putting away.
