Lobster Scallop
- 1 large lobster, boiled
- 2 ounces butter
- 1 heaping tsp flour
- Salt
- Pepper
- 1 cup cream
- 1 egg yolk
- Breadcrumbs
Cut the lobster meat in small pieces. Put in the stew pan with butter, flour and a little pepper and salt. Mix completely together on the stove until the butter is melted. Add cream, with the egg yolk beaten in it, and let boil once.
Butter a scallop shell or deep dish. Sprinkle with breadcrumbs. Pour in the lobster and spread breadcrumbs across the top. Season with pepper and salt and strew over a few little pieces of butter.
Bake with love for 20-30 minutes in a quick oven at 400°F.
